Consulting
The author's consulting and expert witness work is delivered through Frazer Applied Entomology. For a restaurant, a multi-unit operator, a landlord, an insurer or counsel, that work takes a few forms:
- Entomological assessment. A written, Board Certified Entomologist's assessment of a facility: what the pest is, where it is coming from, what the conditions are, and what a program to correct it looks like.
- Inspection report review. A plain reading of a county report's pest lines against the Food Code and the county regulation, with the correction and the record that proves it.
- Records review and standard of care. Whether a pest program and its records meet the standard a reasonable operator would be held to, written to read the same for either side.
- Staff training. Short, bilingual training for kitchen and front-of-house staff on what to report, what not to touch, and why store-bought sprays are a citation in a kitchen.
Disclosure
I also own Falcon Pest Control (Mountain Supply LLC dba Falcon Pest Control), a Utah-licensed pest management company that serves food service and other commercial clients. I don't take expert work involving a facility Falcon services, and nothing on this site refers to any matter in which I have been retained.
